I know its been ages but here is another gorgeous recipe

Lemon Yoghurt Drizzle Cake

for the cake
250g (8oz) unsalted butter, very soft, plus extra to grease the tin
275g (90z) golden caster suger
4 Brown Eggs
275g (9oz) Self Raising Flour
pinch salt
1 tsp vanilla extract
2 lemons, zested and juiced
250g (8oz) Greek Natural Yoghurt
2 tsp Icing Sugar

for the drizzle
2 lemons zested and juiced
150g (5oz) golden caster sugar

1.   Butter and line the base and sides of 23cm round springform cake tin.  Preheat oven to gas 4, 180 or fan       160C.  Bea the butter and sugar together with an electric whisk until fluffy and light.  Add the eggs, one         by one beating well between each addition.

2.   Fold in the flour and salt to make a smooth batter.  Fold in the Vanilla Extract, Lemon Zest, 3                       tablespoons of lemon juice and 100g (3.5oz) of the greek yoghurt.  Pour into the tin smoothing the top           and bake for 50 mins to an hour until golden and springy on top.  Spike the cake all over with a skewer.

3.   Combine the lemon zest, juice and sugar for the drizzle and pour over the warmed cake.  Set aside to           cool completely in the tin.

4.   Stir the icing sugar into the remaining greek yoghurt.  Serve slices of cooled cake with spoonfuls of the sweetened yoghurt.

Tip

If the cake starts to colour too quickly when you put it in the oven place a piece of foil over it.

Banana and Chocolate Chip Muffins - 17.10.13

3oz soft marge
8oz sugar
1 egg
8oz plain flour
3 banana's (ripe) mashed
1tsp bicarbonate Soda dissolved in 1tbs water
4oz choc chips

Mash bananas and cream with marge, add sugar, egg, flour and bicarb mix well then add choc chips

Spoon into muffin cases

Bake @  200°  for 15-20 minutes

London Grill  03.10.13

1 onion chopped
150g mushrooms chopped
8 rashers bacon chopped
2 tins baked beans
3 sausages cooked and chopped into bite size
Black Pudding - Optional
Garlic Bread


In a pan put the chopped bacon, mushroom, and onion cook until everything is cooked.  Add the sausage and beans stir until warm through

In the meantime cook the Black pudding in a fry pan or grill depends what you like.

Cook Garlic Bread

When all hot put into a bowl, top with Black Pudding and serve with the garlic bread.

This is our Saturday night tea when we have all had a busy day and need something filling but easy to cook.  Enjoy

  1. Aww I've never tried banana muffins, I'll give this recipe a try, thanks for posting Alison. We have your quiche on a regular basic now and I had no idea how to make it untill I found your blog. So a big thank you from me and my hungry lot! Lol
